Bill’s Brighton gets a makeover

After it’s humble beginnings as a bus depot, Bill’s Brighton has risen to the forefront of the city’s foodie scene. The second restaurant to open in what has become a flourishing national chain, it’s now received a sympathetic updating. While the new look is distinctly glamorous, and has around 50 more covers, none of its much-loved unique charm has been lost.

Last month saw a hugely successful opening party, packed Brighton’s great and good, and a celebrity or two, all getting toi sample Bill’s legendary fresh food, creative cocktails and all day dining delights. “As our second restaurant, Brighton will always be very special to me,” said founder Bill Collison. “I’m really excited to reveal the new look Bill’s to our regular guests and to the Brighton locals, as well as welcoming some new faces through the door. We’ve looked to retain its original charm whilst making it even more perfect for a celebration, catch up with friends or a romantic date. I hope that the new look Bill’s will be the perfect spot for everyone, any time of day.” Bill’s Brighton opened in 2005, following the success of the original Bill’s in Lewes. There are now restaurants located around the UK.

The restaurant has reopened with a brand new summer menu, featuring a delicious range of new lunch and dinner dishes; try the Bill’s Summer Salad with baby kale, freekeh, sprouts, blueberries & watermelon to start with or Seared Salmon Salad with mango & cucumber.

A new cocktail menu features the perfect summer sundowners including Lemongrass Margarita with fresh chilli and Bill’s Signature Negroni, pairing perfectly with small bites such as the Bill’s Smoky Fire Bread with spicy nduja sausage and chimichurri. There is also a new range of Breakfast Cocktails including the Marmalade Royale with peach, lime & grapefruit marmalade and a new Bloody Mary menu with a choice of four mixes, an ideal accompaniment to the new Baked Spicy Beans, Chorizo & Eggs breakfast dish.
